So here it is… what you’ve all been waiting for. What I’ve been eating through Clean Simple Eats, how I feel, and how I think it can benefit you.

Day 1

Breakfast: Banana Bread Oatmeal

Oh my, let me tell you, this one is a good one. It takes me about 5 minutes to make and it is so yummy! I could have eaten this all day every day this week. Definitely something I’m putting in my recipe book to keep forever. This made me so, so excited to keep on cooking with Clean Simple Eats because it didn’t take me very long and it was so good.

Lunch: BBQ Chicken Pizza

So I was really happy with how this one looked. It smelled SO good I was so excited to eat it, plus me and Mykle were starving. I was happy to have made something so nice for Mykle and I just for lunch! It was very easy and simple as well, probably took me about 15 minutes altogether. Honestly for me, I didn’t really enjoy eating it though. It for sure tasted healthy, and that’s probably why I didn’t like it. But it wasn’t bad, Mykle ended up eating all of it and I ate some. Even though I’m supposed to do something different tomorrow, I might try this one again and see how I like it. I think it is a great, healthy lunch though.

Dinner: Fiesta Lime Chicken

Something they tell you in the very beginning is that you should do meal prep on Sunday. THIS IS VERY IMPORTANT. It’s a really great tool they offer that everything that needs to be prepped is in one section, but I definitely skipped it because I didn’t want to do that on Sunday! That was a mistake. For dinner there was quite a lot of prep work that I wasn’t prepared for. We had gone to a movie, and Mykle said he was CRAVING KFC. So we went to get him KFC and I said I was going to cook when I got home. By the time we got home is was getting close to 8, and I was so hungry! I looked at the recipe for the first time and, me, being hangry, freaked out and panicked. I should have prepped, because I ended up eating Mykle’s mashed potatoes from his meal for dinner. I didn’t make my fiesta lime chicken, which I was SO excited for because it sounded so good. I’m hoping to do better tomorrow. My day just got busier than I thought, so I’m hoping to do some prep in the morning and get things done! However, there is one day this week when I can eat out so I might just say this is the day I’m “dining out” and eat the meals throughout the rest of the week 🙂


Day 2

Breakfast: Banana Bread Oatmeal

Easy, simple, delicious – yet again. I’m happy with my oatmeal! It is definitely a filling meal.

Lunch: Southwest Sweet Potato Noodle Salad

This didn’t happen, I ended up not eating any lunch.

Dinner: Fiesta Lime Chicken Tacos

THIS WAS AMAZING. Oh my gosh oh my gosh oh my gosh. I didn’t follow the recipe exactly (I left out the pineapple and sour cream), but it turned out soooooo yummy. I was so happy with this and it filled us right up. Mykle loved it too! Even though it took a little longer to cook, it was all pretty easy. Again, can’t get enough.

Day 3

Breakfast: Banana Bread Oatmeal

I didn’t eat breakfast this morning. For some reason I was obsessed with getting a bunch of things done, then I got stuck getting my oil changed for an hour, and by the time I got home it was lunch time.

Lunch: Southwest Sweet Potato Noodle Salad

This didn’t happen either – however, I used one of the Clean Simple Eats snacks! This lunch seemed like a lot and I didn’t know if I would like it, and again I had so much to do today so I wanted something quick! There were a lot of steps in this recipe and the snack was easy and fast. I made the dark chocolate cherry smoothie, and it was pretty good and really filling. I’m glad I got the chance to eat one of the snacks!

Dinner: Island Mahi Mahi & Coconut Rice

Let me tell you – I DO NOT LIKE FISH. Mahi Mahi was difficult to find, and when we found some frozen at Costco it was super expensive. We ended up buying battered cod, so – very different. But ya gotta do what you gotta do, ya know? This wasn’t too difficult or time consuming to make, but it wasn’t my favorite. Mykle liked it, he ate both our meals for us so no food went to waste. It just wasn’t my kind of food, but I’m not the best judge. But pretty quick to make, especially with frozen fish!

Day 4

Breakfast: Banana Bread Oatmeal

Didn’t happen, no breakfast!

Lunch: Southwest Sweet Potato Noodle Salad

Again, didn’t happen – NO LUNCH EITHER. My day was super, super crazy.

Dinner: Island Mahi Mahi & Coconut Rice

I did not make this, because I knew I wouldn’t eat it. I didn’t want to go through it all again without even having something for me to eat. We ended up eating pizza at Costco, I hadn’t eaten all day and we had to run to Costco. Yikes!

Day 5

Breakfast: Banana Bread Oatmeal

Sooooo I totally forgot we were going on a day trip this day, and when I did I figured I’d just make some meals to take with us and make us the oatmeal before we left. We pretty much just woke up and left, but I grabbed two bananas so that’s what I ate for breakfast! Close enough…?

Lunch: Southwest Sweet Potato Noodle Salad

We were out of the house, so I didn’t make this. Haven’t made it all week!!! So sad. We had lunch somewhere on San Juan Islands. I ate grilled cheese and fries. I know, I know. But we were on a day vacation, so….

Dinner: DINE OUT

Absolutely, we ate out for dinner. By the time we got back into town we were STARVING. We went to Corner Bakery. I had a sandwich.

Day 6

Breakfast: Hot Cocoa Pancakes

Tried this…. It was alright. We didn’t have great strawberries, which would have made them better, but they were still pretty good. We were happy with it, but I didn’t feel like it filled me up for very long. I was also nervous I made them a little too thin… I’m not sure. They were alright, I would definitely try to make them again!

Lunch: Southwest Sweet Potato Noodle Salad

At this point I have completely stopped trying to make the meals this week. Nope, did not and probably will not make this salad. So sad! I bet Mykle would have liked it. Maybe one day, I mean I still have all the sweet potatoes so maybe I’ll try it out tomorrow.

Dinner: Crispy Chicken Nuggets

Nope… We had frozen pizzas tonight. We wanted to game and relax and so we just picked something up from the store. Bummer! I was actually excited about these.

Day 7

Breakfast: Hot Cocoa Pancakes

We had cereal and yogurt for breakfast.

Lunch: Crispy Chicken Nuggets

I ate a chimichanga! No crispy chicken nuggets.

Dinner: Colorful Chili

It isn’t quite dinner time, but I am planning on making the fiesta lime chicken tacos tonight! They were so good and I still have a lot of extra ingredients, so I’m going to do it again.


My week, I thought, would be perfect to try this out because it was my Spring Break! However, my week suddenly got pretty busy with cleaning and driving to interviews all over Washington. It took up a lot of my time and I didn’t even really get to do too much relaxing, so having time to cook was the last on my mind. I loved certain recipes, didn’t like others, and didn’t even get to some of them. I’m happy to have an easy place to go back and find healthy meals at from time to time, and it made me more motivated to make sure I got my grocery shopping done at the beginning of the week and to plan out meals. It’s so important and helps your day go a lot smoother. We have to eat – we have to eat to survive and by having it planned out makes things a lot easier.
